On the palate, the red wine is aromatic and well-balanced with concentrated fruit notes. A fresh acidity and fine tannins ensure a pleasant mouthfeel and culminate in a long-lasting finish. The Dornier Cocoa Hill Merlot, which has matured for twelve months in French oak, is best enjoyed with dark meat. Well-matured cheese is also highly recommended with this red wine.
