Produced in the Oaxaca region of Mexico, FAIR Whiskey is made from an original variety of "blue" maize. This original blue maize has been cultivated in the Tehuacán - Cuicatlán valley for over 9,000 years. After spontaneous fermentation in open wooden barrels, FAIR Oaxaca Whiskey is distilled twice in copper alembic stills.
It is matured for four years in ex-bourbon barrels in the subtropical climate of the Sierra Norte de Oaxaca mountains. The whiskey then matures for a further 6-12 months in fresh French Limousin oak barrels in the arrondissement of Cognac.
