Winemaker Anthony de Jager selected only the six best barrels of the vintage for the Fairview Limited Release Cyril Back. The grapes for the estate's flagship wine also come from Fairview's best vineyards and deliver a red wine that flows into the glass in a dark red hue. The intense aroma of dark fruits such as blueberries and plums wafts into the nose. Nuances of lavender lend the cuvée of Shiraz (69%) and Cabernet Sauvignon (31%) a spicy component. On the palate, the Fairview Limited Release Cyril Back is beautifully full-bodied with notes of oak and stewed berries. The good tannin structure and fresh acidity make this red wine, which has matured for 30 months in French oak, a perfect pleasure. This characterful red wine, which is dedicated to the father of owner Charles Back, is therefore a treat for the palate on its own, but it is also an excellent accompaniment to aromatic dishes with dark meat or game.
