More information about Mezcalosfera Tepextate Mezcal
In this mezcal, the agaves are juiced in the traditional way with a tahona (stone mill). Like the other Mezcalosfera mezcals, they are then roasted with mezquite and encino wood before being fermented for 6 days and then double distilled.
The bottling quantity for the Tepextate totals only 80 liters and comes from master mezcal distiller Job Cortes.
In aroma, this mezcal carries peppers, bell peppers and jalapenos. On the palate, there is a lot of pepper, some burnt ash, roasted peppers and black bell pepper. This is joined by light notes of green peppers.
About the agave variety Tepeztate:
Tepeztate is an agave that belongs to the Marmorata agave family and has a very distinctive and irregular leaf structure. In the wild, Tepeztate often takes up to 25 years to mature. It also requires a lot of maintenance to grow it sustainably and ensure a supply for the future. Interestingly, it thrives best on steep rocky cliffs.
Also, Tepeztate has some sub-varieties such as Pichomel (also called Pichorra or Pizorra, depending on the region).
