No 105 Mallorcan Verna Lemon - Spirit

When friends invited us to their wedding near Sóller in Mallorca, we got to know the Serra de Tramuntana for the first time and were thrilled. We especially remembered the incredibly aromatic lemons, which made such an excellent jam. And so it was clear that we had to have these fruits to make an equally aromatic spirit.

Our supplier obtains the widespread Verna lemon from small producers who produce ecologically and do not use any treatment during the ripening and after the harvest. The essential flavor carrier of our spirit is the key aroma of the lemon, citral (an isomeric mixture of the aldehydes geranial and neral). In addition, limonene, as well as β-pinene and γ-terpinene, are the main constituents in terms of quantity. Genetically, the various lemon species are crosses of the bitter orange and the citron (Cedro).

With its clear pure and strong lemon note, this spirit is the ideal companion wherever lemons or their juice are added: to fish dishes, summer salads, in dressings, Mediterranean dishes and sour cocktails. In the latter, however, it serves only to enhance the lemon flavor, because the acidity of lemons is not volatile and therefore our lemon spirit is not sour!
