The wild quince, also known as the lemon quince, used to be very common in Slovenia, Croatia, Greece and Cyprus, but today it is almost extinct and can only be found in very few nature reserves in Europe.
Even in the last century, the golden yellow fruits were admired in natural medicine for their natural vitamin C content and were often collected for the production of tasty juices and jellies.
The small, golden-yellow fruits are harvested when fully ripe and then polished again by hand with a linen cloth to remove the fine "fur" on the fruit before processing.
We also deliberately store the wild quince for 1 to 2 weeks before further processing in order to further refine the fruit flavors for our WILD quince.
WILD quince
The most tamed from the Wild collection. A fine interplay of sweetness and acidity with notes of acacia blossom, fir honey, green tea and saffron. The lemon in the finish makes for a wonderfully fresh palate.
Our pleasure tip:
1/16 in a white wine glass, drinking temperature: 10 - 12 °C. As a non-alcoholic accompaniment to food, our WILD Quince is ideal with desserts and intense raw milk cheeses, and is also wonderful with hearty meat and game dishes.
