Ron Libertad Dorado: The golden rum from Chiapas
Ron Libertad Dorado is the "mature brother" of Ron Libertad Blanco. In other words: The content and production of the two rums are identical: Dorado also consists of 100 percent freshly pressed sugar cane juice. But unlike Blanco, Dorado matures for another year in an oak barrel after distillation, surrounded by the tropical climate of the highland forests of Chiapas. This aging period gives it its namesake golden yellow color and even more spice. The beautifully integrated wood notes do the rest, so that the cocktail variation also appears a little more extravagant.
Nose: sugar cane, vanilla, caramel, spicy notes, light woody notes.
Palate: tart and spicy, barrel notes

Ron Libertad
Ron Libertad is the latest project of Casa Dionisio. The idea for this project came from our work with Pox Siglo Cero , where we gained knowledge about sugar cane and panelas - as well as learned to appreciate the producing communities in the state of Valle Chiapaneco (lower area of Los Altos de Chiapas). Since these are the most marginalized urban areas in the state, we decided to continue supporting the different Chiapas communities. The decision to produce a rum agricole is based on the conviction to support the region and at the same time produce a rum that respects the land and its conditions. Another reason is that in these areas of the Chiapas Valley (Pakayal and Santa María las Rosas) are grown three different varieties of sugar cane, including Criolla, Vetada and Violeta, which make Ron Libertad authentic and unique when mixing their juices.
