Things to know about smoky and peaty whiskies

A brief history

Smoky and peaty whisky has its roots in countries such as Scotland and Ireland, where the use of peat as a fuel in whisky production has a long tradition. Particularly in remote areas, where wood was difficult to obtain as a fuel, people relied on the regionally abundant peat. Scotland, with its vast moorlands, is particularly well known for this style of whisky, while Ireland offers a mixture of peaty and milder whiskies.

Making smoky and peaty whisky

The characteristic smoky flavor is created when malted grain is dried over a peat fire. This process is particularly widespread in Scotland, with different regions and distilleries offering different intensities. Peat is also used occasionally in Ireland, albeit less frequently. The peat smoke is absorbed into the malt during the drying process and brings the familiar smoky and earthy aromas to the whisky. Further distillation and storage in oak casks complete the taste experience.

Fun facts about smoky whisky

  • Scotland as a pioneer: Scotland in particular is known for its peaty whiskies. Different regions of the country offer different levels of smoky flavor, from subtle to intense.
  • Ireland's peat variety: Ireland also has a tradition of using peat, although the whiskies are often somewhat milder when peat is used. Nevertheless, there are also whiskies in Ireland that surprise with a distinct smoky note.
  • Craftsmanship and nature: The taste of a smoky whisky depends heavily on the regional conditions, as the peat can release different aromas depending on where it is mined.
  • Focus on pheols: The smoky taste of a whisky is determined by phenolic compounds that are released when the peat is burned. These aromas can be reminiscent of burnt wood, leather, tobacco or even medicinal notes.
  • Regional differences: Although many whiskies from certain regions are known for their peaty character, not all distilleries focus on this flavor. Some distilleries produce both smoky and non-smoky whiskies.
  • Whisky as an experience: Smoky flavours are very polarizing. You either love the taste of a peaty whisky or you find it too strong. There is rarely a middle ground!

Measuring smokiness - the phenol levels

The intensity of the smoky flavor, which is often particularly pronounced in Scotch whiskies, is measured in PPM (parts per million). While many Scotch whiskies have high PPM values, Irish whiskies often have a lower phenol content. This makes Irish whisky a little more accessible for those who prefer a milder smoky note.

Smoky and peaty whisky - for connoisseurs & aficionados only

A smoky and peaty whisky is definitely not for beginners. The intense taste, characterized by strong smoky notes and earthy, peaty aromas, can be overwhelming the first time you try it. Many whisky novices are often surprised by the power and depth of these whiskies. But this is exactly where the appeal lies for many connoisseurs.

It is not unusual to have to get used to the taste. What may initially be perceived as too strong or strange develops into a real passion over time. With every glass you discover new nuances and facets, be it a hint of burnt wood, a subtle spiciness or a maritime freshness. The complex depth of flavor is what makes smoky whiskies so fascinating - they challenge the senses and reward the connoisseur with an unmistakable experience.

For those who are prepared to embrace this intense taste experience, a smoky whisky offers a very special kind of enjoyment. But you should know: This whisky demands attention and respect - not for the faint-hearted, but just the thing for those who appreciate strong, characterful flavors.
