Provvidenti, one of the smallest villages in Italy, once served as a fortress and granary for the indigenous people of southern Italy in the battle against the Romans. We obtain our Provvidentia oil from green, unripe olives of the Olivastra, Gentile and Leccino varieties, which grew then as they do now on the southern slopes of our home village. This oil has a wonderfully light fruity flavor. Delicate green fruit notes and a pleasant sharpness and bitterness on the palate make it an all-rounder for any dish. At Vitelium, everything comes from a single source: the olives come from our own groves, are harvested early by hand and are naturally cold-pressed. This is the only way we can guarantee sustainability and absolute quality from cultivation to the finished product.
